• Precision Processing: Ripe cherries are harvested, disinfected, floated in water to remove impurities, and hand-sorted before undergoing a 24-hour oxidation stage and pulping.
• Layered Fermentation: The coffee undergoes 62 hours of anaerobic fermentation, followed by a 24-hour submerged fermentation with mosto from previous fermentations, and finishes with a thermal shock wash in hot water (65–70 °C) to stop fermentation. 
• Controlled Drying: Drying takes place in hermetically sealed, stainless steel dehumidification units kept below 37 °C, preserving volatile aromatics and terpenes until the coffee reaches a final moisture content of 10–11%. 
• Careful Storage: Finished coffee is stored in GRAINPRO-lined bags to protect against moisture and external contamination.
