Sourced from the highlands of Ermera, East Timor — a region renowned for producing some of the country's finest specialty coffee. Grown at 1,400–1,900 masl using traditional washed processing, a method East Timor has practiced for generations, setting it apart from the wet-hulling techniques common across much of Southeast Asia.

The Producers: 
This coffee comes from smallholder farms across the Ermera municipality — East Timor's premier coffee-growing region, responsible for roughly half of the nation's total coffee output. Most farms range from one to two hectares, with coffee grown under native shade trees using methods passed down through generations.

  • Deep Roots: Coffee cultivation in Ermera dates back to Portuguese colonial times, with the region's name derived from the Mambai word for "red water," a nod to the mountain streams that flow through its highlands.
  • Unique Terroir: Mountainous terrain ranging from 1,000 to nearly 2,000 masl, combined with rich soils of silt, sandstone, and limestone and consistent rainfall, creates exceptional growing conditions for Arabica coffee.
  • Historic Variety: The Timor Hybrid — a naturally occurring cross between Arabica and Robusta discovered here in the 1920s — is the genetic foundation for rust-resistant varieties now grown around the world, including Catimor and Sarchimor.
  • Traditional Processing: After depulping, coffee ferments for 8–24 hours before drying on raised beds or patios — a clean, time-honored approach that highlights the region's natural terroir.
