  • Precision Processing: Cherries are disinfected and floated in water at 65–70 °C to remove impurities before being manually sorted to select only ripe cherries.
  • Layered Fermentation: Cherries undergo a 36-hour oxidation stage in plastic tanks (where leachates are collected for subsequent lots), followed by 48 hours of anaerobic fermentation at 17–20 °C, and a final 24-hour submerged fermentation using mosto and recirculated leachates.
  • Controlled Drying: Drying takes place in hermetically sealed, stainless steel dehumidification units kept below 37 °C, preserving volatile aromatics and terpenes until reaching a final moisture content of 10–11%.
  • Careful Storage: Finished coffee is stored in GRAINPRO-lined bags to protect against moisture and external contamination.
